Quinoa Cookies

Introducing our nutrient-dense quinoa and coconut cookies…. yes, they’re gluten free!  We combined quinoa and coconut to create a delicious good-for-you chocolate chip and chocolate almond snack!

Quinoa became recognized as a ‘super-food’ as NASA proposed it as the ideal food for long duration space flights; quinoa is a complete protein containing all 9 essential amino acids, minerals and omega-3 fatty acids. Due to Quinoa’s high nutritional value it’s considered a “super grain”.  Quinoa is a rich source (>20% of the Daily value, DV, per cup) of dietary fiber, magnesium, phosphorus, and manganese.  It is also a good source (10-19% of DV, per cup) of protein, thiamin, riboflavin, vitamin B6, folate, iron, zinc and copper.  According to the Institute of Food Technologists, a non-profit composed of scientific professionals, quinoa has a “high content of health-beneficial phytochemicals, including amino acids, fiber, polyunsaturated fatty acids, vitamins, minerals, saponins, phytosterols, phytoecdysteroids, phenolics, betalains, and glycine betaine. Over the past 2 decades, numerous food and nutraceutical products and processes have been developed from quinoa.
